Last December 2015, I was invited by the US Potato Board (USPB) to join their Potato Safari 3 in Davao City. We stayed at the Waterfront Insular Hotel, a beautiful beachfront hotel which was only 20-30 minutes away from the airport. On our first night at Davao City, we had dinner at the hotel’s Cafe Uno.
The cozy and classy Cafe Uno at the Waterfront Insular Hotel is a perfect place to chill with great friends while relishing cocktails after a hard day’s work. It is a setting ideal for enjoying great conversations while listening to comforting jazz and R&B music.
Cafe Uno’s executive chef, Victor Barangan, has prepared a delectable five-course meal for Potato Safari 3 that incorporates frozen US potatoes, showing how this imported, high-quality ingredient can easily be used to create innovative and flavorful dishes.
We started with the Bacon and US Potato Roll with Miso Peaches, which was basically French fries wrapped in bacon. What made is extra special was the miso and peach sauce, which was tart, sweet, and savory all at the same time. It truly complemented the bacon and potato fritters.
The next dish that landed on our table was a bowl of their piping hot US Potato and Corn Bisque. I loved this soup because it was thick and very palatable, and the curly fries’ texture really complemented the density of the soup. My favorite dish that was served that night would definitely be the Hot Crab Salad. It’s a perfect play of different textures and flavors from the crunchy crisscut fries to the well-seasoned crab meat and fresh watermelon balls.
Our main entree was the Surf and Turf dish, which featured a perfectly medium beef tenderloin and a giant prawn deep-fried with a potato-based batter. Together they sat on top of a generous serving of mashed potatoes.
And lastly, for dessert, we had the Green Tea Doriyaki, which generous scoops of vanilla and durian ice cream, sandwiched between two green tea pancakes with potatoes and topped with whipped cream.  The durian ice cream was too pungent and strong on its own, but mixing it with the vanilla ice cream mellowed it down and made it easier to swallow. I loved it!
