Fish Ball Sauce Recipe, Just Like Manong’s

There is no doubt we Filipinos love our street food. And if you ask me about my favorite, it’ll have to be fish balls (or fishball). Nothing beats eating fishballs off a stick, piping hot after you just skewered them off a street vendor’s deep-frying pan. But THE best part of it all is dipping them into their famous fishball sauce. YUM!

I’ve always been curious about this well-loved fishball sauce recipe. I studied in UP Diliman and I’m sure many of you have heard that we love eating fishballs there from Manongs who sell them across the campus. It was where I got hooked on the sweet sauce, and I then moved on to the spicy version. I noticed something. It seemed to me that wherever I go, even outside the campus, the taste of the fishball sauce of every Manong fishball vendor (yes, I call all of them manong) I met had the same taste. I wondered, WHAT THE HELL IS GOING ON?!? 😀

Over the past decade or so (ugh, I’m old), I’ve asked different vendors about their sauce. Most of them took wild guesses. There were a couple who refused to tell me anything, which, to me, was an indication they really had no idea, and some were so convinced they had the right recipe.

Of course, I tried to make them at home and failed three times (twice, I was adding vinegar). It was only in late 2004 that I learned the right recipe. The manong who sold fishballs at our home in Navotas told me about his fish ball sauce recipe. The thing is, I didn’t get to making it til a year later. Red Sinigang with Del Monte Tomato Sauce

If there’s one Filipino dish I can bear to eat daily, it’ll have to be Sinigang. Our nanay has tried a variety of Sinigang – with seafood, pork or even chicken and beef (yes, she has tried all sorts of proteins with this dish). She has always cooked it the traditional way, but she was excited and welcomed the idea of adding a tasty twist to a classic dish – Sinigang with Del Monte Tomato Sauce.

Sinigang is a savory sour soup that we Filipinos love. The acidity may come from green mangoes, guava and, more widely used, tamarind (sampaloc). Pork, bangus or shrimps are the usual main ingredients, along with vegetables like kangkong (water spinach), okra, chili (siling haba/pang-sinigang), and onions. Our nanay also add slices of tomatoes to it, but we both haven’t encountered or tasted this dish with actual tomato sauce.

That’s until we found out about Del Monte’s Red Movement where they take classic Filipino dishes and add their famous, Filipino favorite tomato sauce into the mix. Yabu : An Extraordinary Katsu Experience

When Yabu opened last year at Robinsons Magnolia, we initially weren’t that excited. We thought it’ll just be another hyped, overrated restaurant. We couldn’t be far more wrong. We were invited to the opening, but couldn’t come because of work. The anticipation started to build up when fellow foodies started raving about them. So, one weekend, we trouped to Robinsons Magnolia (which isn’t really accessible to us) to finally feed our curiosity (pun intended). 😉

Since they haven’t opened any other branches yet that’s closer to us (we’re looking forward to their SM North Edsa branch!!), we couldn’t dine in as much as we’d love to because their nearest branch is at SM Megamall. Commuting from Malabon to Ortigas is such a hassle because of the traffic, so it took us awhile before we had a chance to dine in again, finally, at their SM Mall of Asia branch about a week ago. They now have 4 branches and from the looks of it, they’re not slowing down.

Anyway, back to our Yabu katsu experience. If there’s one similarity I’ve noticed from restaurants that didn’t wow us, it’s the number of dishes on their menu. When I see that there are too many items on it, I somehow expect to be disappointed. I prefer to see a smaller menu because that means the restaurant gets to focus more on the quality and flavors of the dishes they serve rather than coming up with mediocre dishes while trying to please everyone.

And this is exactly why we fell in love with Yabu. Though they have other items on their menu, you know that they’re focused on one thing: to give you the best Katsu experience – consistently. With every slice and every bite, you’ll sense the technique and passion put in every katsu they serve. It’s no wonder people are coming back for more, hence the Katsu craze.

For us who grew up enjoying savory dishes and sweet desserts, the mere mention of healthful food gives us this impression of bland, sacrificial eating. And we think this is normal since our brains and bodies were mostly programmed to relish anything with salt or sugar. Homemade Beef Kare Kare Recipe (PLUS Seafood Version)

If there’s one dish our nanay prepares that I would want to eat for my last meal, it would definitely be her delicious Beef Kare-kare. Looking back to my childhood days, I realize that my fondness for this dish can be traced back to the days when our nanay would prepare kare-kare as one of her sweet ways in rewarding us for doing well, may it be in school or just for simply behaving at home.

Since I started working almost a decade ago, we’ve had kare-kare more often because whenever I’m craving for it, all we need to do is provide for the ingredients and our nanay will lovingly cook it for us. She’s even made her own seafood kare-kare (after our lunch at Emohruo in Pagudpud) which I also love (see the seafood option below this article).

This is actually one reason I don’t order kare-kare at restaurants because I have high standards when it comes to the flavors of this dish. It’s certainly one of the many things I missed when I lived for a year in Cebu that I begged her for the recipe and had to have someone cook it for me exactly the way nanay instructed. It was close to how she prepares it, but nothing beats the original ’cause it’s made with pure love. 🙂

Many can attest to the tastiness of our nanay’s kare-kare. And after the long delay of sharing the recipe, we finally had the time to prepare the dish for this blog. Creamy Beef Kare-kare Recipe

Kare-kare is a Philippine beef stew, usually made with oxtail or tripe, vegetables and ground peanuts. But, this recipe was made with regular beef cuts.

SERVINGS:

  • Good for 8-10 people, but it’ll really depend on their appetites. The 4 of us can finish this off for lunch and dinner. 😀

Dimsum Break : Finally in SM North Edsa!

One thing most of you don’t know about me is that I lived in Cebu for about a year. Sure, there are many dishes and food places that anyone traveling there shouldn’t miss like Taboan (best place to buy pasalubong like danggit and dried squid) and Sutukil near the Mactan Shrine (Dampa-style restaurants). But, there’s one specific dish that I have been longing to have a taste of again and that’s Steamed Rice, Cebu style. So, I was frantic when I learned that Dimsum Break from Cebu is opening a branch here in Manila – at SM North Edsa! 😀

When I moved back here, I have been longing for another taste of their Steamed Rice. In a desperate move, I begged Mai, one of the contributors in this food blog, a pure Cebuana, to come up and share a recipe for Cebu style Steamed Rice that she made here at home. The flavors are close to the actual dish from Cebu, but there’s something missing. Still, the recipe did satisfy our craving.

You might be wondering what the heck this Steamed Rice dish is. Don’t take it literally. It’s not just plain steamed rice. It’s a mix of many ingredients and with just one small bowl, it can fill you up because of the combination of the rice, the sauce, peas, the shrimp and pork (or beef). Cafe Jeepney : Buffet in Intercontinental Manila

Being a group-buying site frequent shopper, I actively check various deals sites to find out if they have anything new that I’d be interested to purchase. Since I haven’t bought anything from Deal Grocer yet since the 3rd quarter of last year, I decided to buy 2 half-priced vouchers for Cafe Jeepney’s banquet buffet that they were offering. I’ve done my research and I’ve read fellow food lovers enjoying their buffet spread, so I had some set expectations already.

This is a long overdue post. We dined here in December last year, but they’ve had their famous buffet for decades, so I don’t think there’ll be a lot of changes you can expect, except some of the dishes that were available during our visit might not be the same ones you’ll get when you dine in.

Cafe Jeepney is located inside the Intercontinental Manila in Makati, right beside Ascott Manila and across Glorietta 4. When you come in the front entrance, they’re on the right side. You’d see this:

Whenever my bro and I see a World Chicken stall, may it be in Trinoma, Gateway Mall or in Glorietta, we can’t help but wrestle with the idea of ordering their oh-so tender grilled chicken.
